The excellent Hanna came to my rescue yesterday with this great Pica De Gallo recipe. I can’t wait to try it out.
Hanna’s Pica De Gallo
2 lg Tomatoes; seeded & coarsely chopped
1 To 2 serrano chile peppers;seeded & chopped
1/3 c Chopped green onions
2 tb Chopped fresh cilantro
2 tb Lime juice
1/4 ts Salt
Combine all ingredients; mix well. Cover; refrigerate until serving time.
Another great recipe for tomatoes which both extremely simple and tasty is
an authentic Italian appetizer.
Mozzarella, Tomato and Basil
1 pound fresh mozzarella cheese, cut into 1/4″ thick slices
3 to 4 medium fresh tomatoes, cut into 1/4″ thick slices
1 bunch of fresh basil leaves
Extra-virgin olive oil
Salt and pepper
Take a slice of mozzarella cheese, overlay a slice of tomato, and then overlay a leaf of fresh basil. Drizzle with olive oil and sprinkle with salt and pepper. Make it interesting try this with heirloom tomatoes.
