As I mentioned before, my cucumber plants are out of control. Lately, I have been enjoying a lot of summer salads. You can’t beat the combination of cucumber and tomatoes. This is my usual recipe.
Cucumber and Tomato Salad
1 cup of cucumber peeled, seeded and diced
2 cups of tomatoes diced (or cherry tomatoes halved)
1/4 cup of Fresh mozzarella diced
2 tablespoons of toasted sunflowers seeds
Vinaigrette
1 table spoon of balsamic vinegar
3 table spoons of olive oil
1 tsp of oregano
salt and pepper to taste
1. Mix the cucumber, tomatoes, mozzarella, and sunflower seeds together in a large bowl. In a smaller bowl whisk the balsamic vinegar, olive oil, oregano, and salt and pepper together. Drizzle vinaigrette over salad.
I have been scouring the internet for additional cucumber ideas. There are so many great cooking sites out there that I often find myself needing lunch by 10:00 am. Here are some of my favorites.
Simple Recipes Cherry Tomato Cucumber Feta Salad– The combination of the lemon vinaigrette and the feta is delicious. I have just been substituting the cherry tomatoes with diced tomatoes.
The Kitchen Sink’s Thai Cucumber Salad this looks amazing and refreshing. I keep planning on making it but I keep polishing off my peanuts before I get the chance.
Pro Bono Baker’s Cucumber Infused Vodka– I am intrigued by this recipe. I plan to give it a shot this weekend.
