There is nothing better than going to your backyard and selecting something to eat. Leafy greens are best in late winter and early spring. I like to experiment with light vinaigrettes. My dad was recently giving away bags of fresh, sweet oranges from his tree. I improvised and made this light slightly sweet vinaigrette for the salad.
Orange Vinaigrette
1 Tbsp of honey
1 Clove of minced garlic.
2 Tbsp of freshly squeezed orange juice
1 Tbsp of olive oil
Salt and Pepper to taste
I combined the ingredients and mixed well. Then I poured the mixture onto a bed of greens consisting of spinach, mizuna mustard, and salad bowl lettuce. I topped with Parmesan and orange slices. Viola, a light but flavorful salad.
I like that you said Viola (my favorite flower) instead of Voila. 🙂 We had spinach and orange salad tonight too, sans the parm and fancy dressing. I am so lazy, I just pass the olive oil and raspberry vinegar over the bowl, grind the pepper twice and I’m done. I will have to try yours sometime, though, it sounds delicious.
I just went and cut myself a small piece of parmesan cheese, those shavings made me do it!
“Our” dinner ?
This is very similar to my winter standby salad. I found that just about any fruit tastes great with baby spinach, some cabbage and a sweetish dressing. I’m anxious to get some greens started in my garden and trying those. Love your idea to add cheese- will definitely try that!
