I have been enjoying the Meyer lemons off my
tree for the past few weeks. Last night we tried Smitten Kitchen’s recipe for Lemon Risotto. The first time I made this it was a little too much lemon so I tweaked the recipe and put half the amount of lemon juice. I also added scallions as a garnish. The result was a divine, creamy risotto with just the right touch of lemon goodness to contrast with his shrimp and my chicken.

Oh, that looks so delicious! I need to try that recipe. I agree that cooking with lemons, even Meyers, is a delicate thing – too much and it’s just kind of ick. Your lemons are gorgeous, I’m so jealous!

That lemon tree looks amazing! (It makes me want to try growing a little lemon tree next year… I wonder if it would grow in the pacific nw?)
