Last Saturday, I ventured out into the backyard and found that several of plants were ready for a mini-harvest. I was able to combine my previously harvested garlic and Walla Walla Onion and combine it with my new tomatoes and jalapeno. About half of my tomato plants are producing tomatoes. Last Saturday, I was able to collect a few of each of the cherry, Chico III romas, Italian Market, and Green Zebra tomatoes.
We then added onion, garlic, cilantro and fresh lime juice to the chopped tomatoes.
From there, you add a touch of salt and pepper and let it chill in the fridge for a while. The result is the best salsa. I really liked using the Green Zebra tomatoes with the other tomatoes. Green Zebras have a unique taste that compliments the other ingredients. It was also nice to use the Walla Walla onion which is more sweet than what you find at a store. We served it with some tortilla chips and burritos and it was gone before we knew it.
