Cinco De Mayo Fiesta

Cinco De Mayo was on Monday. We celebrated with our own little celebration. We started the party with Simon’s addictive homemade guacamole along with a potent pitcher of margaritas. Our main course were these fantastic vegetarian quesadillas. It was especially nice because we were able to use spinach and scallions from our garden.

Simon’s Cinco De Mayo Quesadillas
Tortillas
Spinach
Red Onion sliced
Thinly sliced roma tomatoes
Montery Jack cheese shredded
Pepper Jack cheese shredded
A dash of salt and pepper
A touch of chili powder
butter

1. Melt small pat of butter on a pan.
2. Place tortilla on pan
3. Sprinkle cheese mixture on the tortilla
4. Add Spinach, Onions, and remaining ingredients.
5. Once cheese has melted fold tortilla over and carefully place on plate.

Serve with some salsa and guacamole on the side and viola!

    That’s wonderful you were able to grow the scallions and spinach. Can’t get more fresh than that! 🙂
