What To Do With All of Those Cucumbers

As I mentioned before, my cucumber plants are out of control. Lately, I have been enjoying a lot of summer salads. You can’t beat the combination of cucumber and tomatoes. This is my usual recipe.

Cucumber and Tomato Salad
1 cup of cucumber peeled, seeded and diced
2 cups of tomatoes diced (or cherry tomatoes halved)
1/4 cup of Fresh mozzarella diced
2 tablespoons of toasted sunflowers seeds

Vinaigrette
1 table spoon of balsamic vinegar
3 table spoons of olive oil
1 tsp of oregano
salt and pepper to taste

1. Mix the cucumber, tomatoes, mozzarella, and sunflower seeds together in a large bowl. In a smaller bowl whisk the balsamic vinegar, olive oil, oregano, and salt and pepper together. Drizzle vinaigrette over salad.

I have been scouring the internet for additional cucumber ideas. There are so many great cooking sites out there that I often find myself needing lunch by 10:00 am. Here are some of my favorites.

Simple Recipes Cherry Tomato Cucumber Feta Salad– The combination of the lemon vinaigrette and the feta is delicious. I have just been substituting the cherry tomatoes with diced tomatoes.

The Kitchen Sink’s Thai Cucumber Salad this looks amazing and refreshing. I keep planning on making it but I keep polishing off my peanuts before I get the chance.

Pro Bono Baker’s Cucumber Infused Vodka– I am intrigued by this recipe. I plan to give it a shot this weekend.

    Your salad looks yummy.
    Recently the hubby and I dined at a local steakhouse. My husband ordered his favorite salad which this restaurant calls “The Wedge”. Wedge of iceberg lettuce, blue cheese dressing, blue cheese crumbles and crumbled bacon.
    His salad arrived on a large plate with a shot in a shot glass alongside the wedge. When I asked the waiter what the shot was he replied that it was chilled cucumber infused vodka. Hubby is no vodka fan so gave it to me. It was very good, cool and refreshing on a hot summer night.
    I thought serving the chilled shot alongside the wedge salad was a neat presentation and clever twist to a rather (my opinion, boring) salad!

    Yummy! Your recpies look good, but I favor cukes in Asian-type salads, need to find a recipe with soy sauce, ginger, and sesame seeds or something similar. Mm, or maybe with all of that plus chilled soba noodles? Well, that would require boiling water, which it’s way too hot for at the moment. Have fun using all your cukes! Are you going to make pickles?

    I had the most delicious cucumber salad, mostly with vinaigrette and onion, from a deli not that long ago. I keep meaning to replicate it–how fantastic would it be to make it from my own cucumbers…someday, maybe!

    Yum! My cukes are taking off like crazy too. That’s a good problem around our house though.

    Here’s a unique recipe from The Frugal Gourmet (remember him?) that’s one of my favorites. Peel and seed your cuke and cut into 1/2 inch slices. Saute in butter until just translucent and add a sprinkle of salt and pepper. Must eat them while hot! Mmmm, I’m ready for lunch too and it’s only 11 am.
